To awaken your appetite, and to introduce a theme, antipasti are sometimes served.  Typical dishes include bruschetta with garlic, olive oil, and fresh tomatoes,  prosciutto di Parma with melon, pumpkin blossoms filled with cheese and anchovies.

Antipasti is my favorite “category” and I hope you will try making  some of my favorites!

Caponata (Sicilian Sweet and Sour Eggplant)

Peperonata (Stewed Sweet Peppers)

Pomodori a Riso (Tomatoes Stuffed with Rice)
